Healthy Flavorful Chickpea Vegetable Medley with Light Stir Fry Sauce Over Basmati Rice (Vegan)

Of course, the best thing about this recipe is that it is very flavorful and delicious, but it is also nutritious, low-calorie, low-fat and very satisfying which is so important when you are either trying to lose weight or simply trying to maintain your weight eating a healthy diet.  I also love that this is vegan, quick, easy, inexpensive, very high in protein and very high in other important nutrients. There is a short list of ingredients which makes this inexpensive and quick to prepare.  Perfect for after work or when you need a quick nutritious meal.

I enjoy the lightness of the this meal, especially after thanksgiving when you are feeling so full from a heavy meal. I feel the lightness and nutrition of the nutritious vegetables, and I love how there is no fat, oil, heavy cheese or a huge amount of starchy dough. Eating a vegan diet three days per week leaves me feeling so full of energy and healthier.

PREP TIME:  5 minutes (FAST!)

COOK TIME:   7 minutes

INGREDIENTS:
6  mushrooms sliced
1 green pepper sliced
1 tablespoon of chopped garlic
1/2 cup chickpeas (garbanzo beans)
1 tablespoon vegan butter or vegetable oi

DIRECTIONS:

Step one:  Add all above ingredients.  Salute until tender.

Step two:  Cook basmati rice in a rice cooker – one part rice, one part water.

Step three: Prepare 10 parts water with one part soy sauce.  Add to vegetables and beans.image2

Step four:   Stir fry until veggies are soft.  Serve over basmati rice.
